There is no need to peel the sweet potatoes, just wash them thoroughly. Then cut them into thick pieces (about 5-7 cm each). Make sure that they are of the same size so that they bake evenly.
Pour the olive oil into a large bowl adding the spices of your choice. Now add your slices potatoes and mix well in order to cover every single one of them in the oil.
Distribute the fries over a baking tray lined with baking paper and bake them for 20-25 minutes on a temperature of 180-200 degrees Celsius. The exact baking time depends on the type of sweet potato used and your own preferences. The fries taste the best when they are slightly brown, and soft.
The fries should be served hot. You can add other vegetables such as carrots, celery or peppers to them. They combine well with hummus with olives, and dark bread with mustard (such as shown on the picture). Bon appetit!
