  1. Bring the lentils to boil. They will take around 45 minutes, so reserve some time for it.
  2. Meanwhile, cut the champignons and bell pepper in small pieces and fry them in a frying pan.
  3. When the lentils are ready, blend half of them together with half of the champignons and pepper, olive oil and tamari. Blend till you get a porridge-like mass.
  4. Transfer the mixture to a bowl, add the rest of the lentils and part of the veggies (you can leave the rest of the veggies for decoration, or add them), and knead/mash.
  5. Add some buckwheat flour. The quantity will depend on how wet the mixture is, so you might need to use less or more of it. The end result needs to be a dough-like mixture that you can easily roll nice balls from.
  6. Form the mixture into balls with your hands and flatten these with your hand to form burgers. Fry them on a reasonably high fire in a bit of olive oil on both sides.

  1. Peel the beetroots. Cook the millet. Rinse it well under running water before boiling (otherwise the millet will have a bitter taste). Boil in lightly salted water (2 1/2 cups of water for 1 cup of millet) on a low fire for 15 minutes, until the water is gone. Let it chill for a bit.
  2. Heat the oven to 200 degrees celsius.
  3. Grate the beetroot rather thickly. Chop the onion really finely. Chop the parsley and also the garlic very finely or shred it with a grater or garlic press. Roast the sunflower seeds on a dry frying pan.
  4. Put everything into a large bowl and mix well. It is advisable to use gloves or tools for mixing as beetroots tend to leave rather stubborn stains on your hands.
  5. Form burgers with your hands and transfer these onto a baking sheet lined with baking paper. You can sprinkle some extra sesame on top.
  6. Bake the burgers for around 30-40 minutes, heating both up and down. Then carefully flip them over onto the other side and grill them for another 5 to 10 minutes.
  7. Serve with grilled bread, vegetables, sauces or however you prefer.

  1. There is no need to peel the sweet potatoes, just wash them thoroughly. Then cut them into thick pieces (about 5-7 cm each). Make sure that they are of the same size so that they bake evenly.
  2. Pour the olive oil into a large bowl adding the spices of your choice. Now add your slices potatoes and mix well in order to cover every single one of them in the oil.
  3. Distribute the fries over a baking tray lined with baking paper and bake them for 20-25 minutes on a temperature of 180-200 degrees Celsius. The exact baking time depends on the type of sweet potato used and your own preferences. The fries taste the best when they are slightly brown, and soft.
  4. The fries should be served hot. You can add other vegetables such as carrots, celery or peppers to them. They combine well with hummus with olives, and dark bread with mustard (such as shown on the picture). Bon appetit!
